All the organic coffee from the Sonusco region is collected and prepared in a single dry mill located in Tapachula, Chiapas. Due to the location of their mill they have focused on organic coffee production, although certified organic coffee can also be found in many other states in Mexico.
Grown at an altitude between 1,100 and 1,600 meters above sea level, the cherries are carefully processed into parchment by each small producer with strict quality control standards set by their cooperative.
The cooperative collects and purchases only the best quality parchment before delivering it to their dry mill facility. They then perform their own quality control on the parchment before preparing it into the best possible export quality.

Mexico Organic Berillo has a nice aroma of dark chocolate, tobacco, and honey which is complimented with a sweet citric acidity, and a pleasant sweet finish.
